Vegan Strawberry Banana Creamsicles

Savour your summer with these vegan, banana strawberry creamsicles. Naturally sweet and icy, with a nutty chocolatey crunch. Healthy Creamsicle Recipe

Although these are technically a dessert, they still are healthier than most creamsicles out there. Not to mention the recipe is composed of fruit, nuts, and of course a little bit of vegan chocolate. You may want to make these creamsicles with less sugar. If you omit the chocolate, the dessert becomes refined sugar free.

The creaminess of the banana, combined with the fresh tartness of the strawberries, is a perfect combo. This flavor is one you are going to crave. Especially on a hot day.

How to Make Banana Strawberry Creamsicles

Begin by adding the cashews and plant milk to the blender. Blend on high until smooth. Next, add in the bananas. Start on low then increase to high until a thick creamy consistency. Imagine something similar to soft ice cream texture. Also, you may need to add additional plant milk if necessary. But use your judgement, and be sure not to add too much.

By using a spoon, scoop the banana nice cream into the molds. If you want to make banana strawberry ombre circles, fill the mold half way with the banana nice cream. But if not, skip the following steps and go straight into molding and freezing. Either way will result in delicious whole food plant based goodness :).

Next, using the leftover banana nice cream, add in the strawberries and additional plant milk, and blend on high. Depending on how much banana nice cream was placed into the molds will determine how much extra plant milk you’ll need to add. Once the banana strawberry nice cream is thick and smooth, add in the remaining strawberry nice cream into the molds.

Finally, place in the freezer and freeze overnight or for 6 hours.

Healthy banana strawberry creamsicles with crushed peanuts and chocolate drizzle.

Ingredients

  • 2 Cup 2 Banana, Frozen, Slices

  • 1/3 Cup 1/3 Cashews, Soaked, Strained/Rinsed

  • 2/3 Cup 2/3 Plant Milk (add additional if needed)

  • 1 Cup 1 Strawberries, Frozen

  • 2 Tbsp 2 Chocolate chips

  • 1 Tbsp 1 Peanuts, Crushed (optional)

Directions

  • Begin by adding the cashews and plant milk to the blender. Blend on high until smooth.
  • Next, add in the bananas. Blend on high until a thick and creamy consistency develops. (Similar to ice cream)
  • Add additional plant milk if neccesary.
  • Using a spoon, begin to scoop the banana nice cream into the molds. If you want to make banana strawberry ombrecicles, fill the mold half way with the banana nice cream.
  • Using the left over banana nice cream add in the strawberries and additional plant milk and blend on high. Depending on how much banana nice cream was placed into the molds will determine how much extra plant milk youll need to add.
  • Once the banana strawberry nice cream is thick and smooth add in the remainding starwberry nice cream into the molds.
  • Place in the freezer and freeze overnight or for 6 hours.
  • Chocolate Drizzle
  • Using a double boiler, add the chocolate chips and allow them to melt.
  • Once melted, spoon the chocolate out and decorate the creamsicles with the chocolate.
  • Sprinkle the crushed peanuts on top and enjoy!
