If you guys have been following our posts, you’ve seen our last recipe for Creamy Cauliflower and Pine Nut Sauce. This new recipe uses that delicious creamy, comforting, sauce to make an exceptional Vegan Chicken & Broccoli Pasta.

Wait, Vegan Chicken?

If you’re new to the amazing progression of vegan food, then hello! and welcome! Within the last couple of years, the vegan culinary community has discovered and been experimenting with seitan. Seitan is a completely plant based alternative to meat. Made from vital wheat gluten.

Seitan provides a really good vegan meaty bite. It has the density and chewiness most people miss when giving up animal products. Also, it’s packed with protein.

For this recipe we used a brand called No Evil Chicken, it’s one of our favorites for chicken-like alternatives.

Pro Tip

We have found the No Evil Chicken brand can be overcooked easily. When over cooked it becomes tough and chewy.

How to Cook Seitan Chicken

Creamy Cauliflower Chicken Pasta

Cooking seitan chicken is really simple because its quick!

First remove the seitan chicken from the package. Sear for about until 1 minute each side. Or until golden brown. Add the spices at the last 30 seconds of cooking and then set aside.

Pro Tip

An easy hack to cooking the broccoli is to add raw broccoli into the boiling water of pasta about 2-4 minutes before the pasta finishes cooking. By using this trick, at the end of the meal, there are less dirty dishes. Everyone loves less dishes!

Seared seitan chicken and broccoli pasta, with a creamy garlicky cauliflower and pine nut sauce.

Ingredients

  • Seitan Chicken
  • 20 oz 20 Seitan Chicken

  • 1 tsp 1 Olive Oil

  • 2 Tbsp 2 Garlic Powder

  • 1 Tbsp 1 Smoked Paprika

  • 1 tsp 1 Salt

  • 1/2 tsp 1/2 Pepper

  • Pasta
  • 1 lb 1 Pasta

  • 2 Heads 2 Broccoli

  • Creamy Cauliflower Pine Nut Sauce
  • 1 Recipe 1 Creamy Cauliflower Pine Nut Sauce

Directions

  • Make 1x batch of Cauliflower Cream Pine Nut Sauce.
  • Bring a large pot of water to a boil. Heat a separate saute pan to medium high heat.
  • Add pasta to boiling water. While the pasta is boiling, add the oil to the sauté pan and sear the seitan chicken with the spices.
  • Sear the seitan on each side until golden brown and then add the cauliflower sauce and slowly bring to a simmer. Add the broccoli to the pasta water to cook for the last couple of minutes with the pasta.
  • Strain the pasta and broccoli, and then add directly to the sauce.
  • Serve immediately. Garnish with toasted pine nuts, chive blossoms, edible flowers, or serve it up as is.

  • We used NO Evil seitan chicken brand
