No Bake Carrot Cake Bites

Great as a snack, dessert, or even a morning energy bite, these cake bites are soft, naturally sweetened. They are loaded with carrots, raisins, dates, then rolled in coconut flakes. Serve these up to some family or friends, and watch as they get devoured! We made these and they were gone the same night! Don’t turn on your oven. We’re making cake without the bake. Grab that food processor and let’s get it pulsing!

One Bowl, No Bake Carrot Cake Bites

You are going to love how minimal these carrot cake bites are! All they require is the food processor. Don’t worry about fussing with spring form pans, baking temps and times, and exact measuring. This recipe is easy and flexible. And only one major piece of equipment!

This recipe is easy, simply add all the ingredients into a food processor, and blend until smooth. By blending in the food processor, the nuts and dates will become the binding agent, and allow a dough to form.

From here use a scooper, or your hands, to roll out little balls. They’re so yummy that we ate about 3 halfway into rolling the dough. The fact that these are no-bake makes them even yummier, because you can enjoy them sooner!

Soak The Dates

This recipe does not call for sugar, so we are going to use one of nature’s sugars, dates. You’re going to love how the dates, raisins, and carrots give these cake bites a natural sweetness. It is important, especially when using dried, to soak the dates. This will help make them soft and easy to blend.

Soaking the dates is a fairly easy process. Emerge the pitted dates in a bowl with warm water.

After they’re soaked, the dates will become soft, and blend easier in the food processor. Also, we recommend saving the soaking water. This water is great for smoothies and other sweet recipes. Depending on the type of dates you’re using it could take around an hour.

The topping is optional, but definitely makes them prettier. Add about a fourth cup of shredded unsweetened coconut flakes into a high speed blender. Blend on high until powder like. Alternatively, you could leave the flakes chunkier; however, the brand we used did not stick very well when we left the flakes whole.

Place the flakes into a bowl. Next take the Carrot Cake Bites and begin to roll them in the flakes.

We wanted to keep these bites raw, meaning no cooked ingredients. Though, if you’re into it, another good idea to jazz up the toppings, is to melt some white chocolate chips and drizzle the bites as if it were icing. Sounds like a real sweet taste treat!

Fluffy vegan gluten free carrot cake bites naturally sweetened with dates and raisins.


  • 1 Cup 1 Carrots, Shredded

  • 1 Cup 1 Dates, pitted, Soaked 1 hour prior

  • 1 tsp 1 Vanilla extract

  • 1/2 Cup 1/2 Coconut flakes, Unsweetened

  • 1/4 Cup 1/4 Coconut Flour

  • 1 tsp 1 Cinnamon

  • 1/4 Cup 1/4 Raisins

  • 1/4 Cup 1/4 Reserve Date Water

  • 1/2 tsp 1/2 Ginger, Powder

  • 1 Cup 1 Pecans

  • 1/2 Cup 1/2 Walnuts

  • 1/4 Cup 1/4 Coconut flakes, blended (optional)


  • Add ingredients to a food processor.
  • Blend on high until smooth.
  • Once the mixture has been blended and smooth, begin to scoop the mixture and roll into balls.
  • Blend the coconut flakes on high for a couple seconds and place in a bowl.
  • Take the Carrot Cake balls and roll them in the blended coconut flakes.
  • Continue to roll all the balls in coconut flakes.
  • Store in an airtight container in the fridge for up to 5 days
  • Enjoy!
